Add all the wet ingredients (including the yeast mixture) and mix until a dough is formed. 6. Lastly, add the walnuts and cranberries and mix to combine. Knead the dough with your hands for a while to fully incorporate the ingredients. Shape into a loaf. 7. I used an 8x5x4 inch (20x13x10 cm) loaf pan lightly greased and lined with parchment paper. It is important to use a suitable pan for yeast bread. The pan should be narrow and tall. 8. Transfer the dough into the pan. 9. Cover loosely with a towel and proof at a warm area for about 20 to 30 minutes or until it has risen up to at least 3/4 of the pan. Here's a tip to create a warm area - turn on the stove fire for a while then turn it off. Place the pan with dough on a baking tray and let it sit on the warmed-up stove. Leave the hood lights on. This warmth helps to proof the dough quite quickly. And you can reheat the stove midway to warm up the area again. 10. Once the dough has risen nicely, bake at the lowest rack for 1 hour. When it is done, the crust should be hard and internal temperature should be 200 F or 93 C. 11. Cool completely on a wire rack before slicing. 12. This bread can be kept at room temperature for a few days if you have a cool and dry climate. Otherwise, it's better to refrigerate earlier for up to a week or freeze for up to 3 months.

T Y P E D R E C I P E S: Baby Back Ribs: 3 lbs pork baby back ribs 2 tbsp olive oil 1 tbsp garlic powder 1/4 cup brown sugar 1 tbsp granulated garlic 1 tsp chili powder 1 tbsp smoked paprika 1 tsp salt 1 tsp black pepper 1 tsp cumin Mix all the seasonings together and rub on your ribs. Cover your ribs tightly in aluminum foil place in a preheated oven to 300 degrees for 3.5-4hours. After baked take the ribs out of the foil and brush BBQ sauce all over. Place back in the oven under the broiler for 2-3 minutes. Enjoy Chicken Bacon Ranch Casserole At least 5 strips of bacon 1LB chicken breast cubed Onion powder Garlic powder Paprika Salt Pepper 2 eggs 2 10 oz bags of steamed cauliflower rice 12 oz broccoli florets steamed 2 TBS ranch seasoning 2 cups sharp cheddar cheese Cook the bacon, once cooked remove it to a separate place and add your chicken season with garlic powder, onion powder, paprika, salt and pepper. Once cooked remove to a separate plate. Whisk the eggs together. In a large bowl add your steamed cauliflower rice, steamed broccoli, crumbled up bacon, cooked chicken, ranch seasoning, eggs, 1 cup sharp cheddar cheese, season with salt pepper onion power garlic powder paprika. Mix all together. Place in a greased casserole dish. Bake on 350 for 20-25 minutes.

In another clean and dry bowl, add the egg whites, cream of tartar and beat at medium to high speed. Add the sweetener in 3 batches and beat until stiff peaks. 6. Add the meringue into the batter in 3 batches. Fold gently to combine. Do not stir or mix as it will deflate the meringue. The volume of the batter should increase significantly, and the texture is smooth, light and fluffy. 7. Transfer the batter into a 9x9 inch square pan lined with parchment paper. Spread evenly. 8. Bake for 20 to 25 minutes. Test doneness with a wooden skewer. Once the cake is done, cool completely on a wire rack. 9. Meanwhile, make the frosting. Freeze the bowl and beaters for 30 minutes. If necessary, use another bowl and fill with ice cubes to help with the whipping process. This is optional unless you live in a tropical climate like me. 10. Add the instant coffee powder and hot water in a cup. Stir until dissolved then set aside. 11. Add the cold whipping or heavy cream, powdered sweetener, sieved cocoa powder into the cold bowl and beat at low speed to combine. Then add the coffee mixture and beat at medium to high speed until a firm texture. Chill the cream until needed. 12. When the cake is completely cooled, start the frosting. Transfer the cream onto the top of the cake and spread evenly. Then chill in the refrigerator for 1 hour. 13. Trim the sides of the cake (optional). Slice into 9 or 18 servings. Baking Powder = 8 g (2 tsp) Monk fruit = 50 g (1/4 cup) (Or any keto friendly sweetener). Salt = 2 g (1/2 tsp) Unsweetened Dried Cranberries = 23 g (3 tbsp) Chopped toasted pecans = 20 g (4 tbsp) (OR any nuts) Orange zest = 1 orange Lemon zest = 1 lemon WET INGREDIENTS Eggs = 4 large egg whites (140 g) (OR 25 g egg white powder + 140 ml room temperature water to be added into the wet ingredients) Apple Cider Vinegar = 15 ml (1 tbsp) Rum Extract = 1 to 2 tsp (Note: You can also use rum, but you need to reduce the amount of milk accordingly) Unsalted Butter (softened) = 30 g (2 tbsp) YEAST MIXTURE Instant or Rapid Rise Yeast = 12 g (3 tsp) Pea Milk or Almond Milk (Unsweetened) =120 ml / 1/2 cup (The temperature for this liquid should be between 120 to 130F or 50 to 56C. You can use the microwave to heat it up. Do not worry as this temperature would not kill the yeast. The very warm temperature actually wakes the yeast up from its dormant state so that it will get to work.) DIRECTIONS 1. Preheat the oven at 210F or 100C if you are using the oven to proof the dough. If not, preheat at 350F or 180C. 2. Add all the yeast mixture into a bowl, stir to mix then set aside. This is to check the condition of the yeast. 3. In a big bowl, add all the dry ingredients and mix until well combined. 4. Add all the wet ingredients including the yeast mixture (except the butter) and mix until a soft dough is formed. 5. Lastly, add the butter and mix until well combined. 6. Place the dough into a panettone mold up to 1/2 or 3/4 high. In the video, I used a panettone mold with the size of 112 x 85 mm or 4.4 x 3.3 inch. I also used 2 mini baking cups with the size of 70x50 mm or 2.8x2 inch. This recipe makes 1 big panettone and 2 mini ones. 7. Spread the top of the dough evenly then sprinkle with coconut flour or oat fiber to prevent the dough from sticking to the towel. 8. Cover with a towel loosely and proof at a warm area or in the oven. If using the oven, place a baking dish with boiling water below the rack with the dough. Proof at 210F or 100C for about 20 minutes or until the dough is well risen. This temperature will not kill the yeast. In fact, it is very conducive for the yeast to thrive together with the moisture from the boiling water. After proofing, remove the dish with water. 9. Once the dough has risen well enough, brush with egg wash (1 egg yolk + 1 tbsp water). 10. Bake at the lowest rack at 350F or 180C for 30 minutes for the mini panettone and 50 minutes for the big panettone. If you used the oven to proof the dough, just increase the heat to 350F or 180C. 11. The panettone can be kept at room temperature for a few days provided you have a cool and dry climate. Otherwise, it is best to refrigerate earlier for up to a week and freeze for up to 3 months. NOTE This post may contain affiliate links. Almond flour = 310 g 2. Coconut flour = 80 g Baking powder = 12 g (3 tsp) Baking soda = 4 g (1 tsp) (This is optional, but it does make the cake texture softer.) Salt = 3/4 tsp Monk Fruit = 80 g (6 1/2 tbsp) (OR any keto friendly sweetener) COFFEE BATTER Instant coffee powder = 15 g (3 tbsp) Hot water = 15 ml (1 tbsp) Unsweetened cocoa powder = 15 g (2 tbsp) WET INGREDIENTS Whole eggs = 4 large (230 g) Unsweetened Greek Yogurt / Plain Yogurt = 260 g (1 cup + 2 1/2 tbsp) (OR Heavy/Whipping, Sour, Coconut Cream) Unsalted Melted Butter = 80 g (1/3 cup) Vanilla extract = 1 tsp CREAM CHEESE FROSTING Cream Cheese (softened) = 150 g (2/3 cup) Whipping Cream (Cold) = 80 ml (1/3 cup) Allulose Powdered Sweetener = 80 g (1/2 cup) (OR any keto friendly powdered sweetener) Instant Coffee Powder = 10 g (2 tbsp) Hot water = 7 ml (1/2 tbsp) DIRECTIONS 1. Preheat the oven at 350 F OR 180 C. To avoid over browning and undercooked batter, I like to bake at 320 F OR 160 C for 30 minutes then increase heat to 350 F OR 180 C for another 30 minutes. However, this is optional. 2. Add the instant coffee powder, hot water into a small cup and stir until dissolved. Set aside. 3. In a bowl, add all the dry ingredients and mix until well combined. 4. Add all the wet ingredients and whisk until well combined. 5. Separate the batter into 2 portions. In the video, I divided the batter into half equally so you can see that the coffee color is more prominent. If you prefer the vanilla color to be more prominent then just divide the batter into 2/3 vanilla and 1/3 coffee. Once you have divided the batter, set the vanilla batter aside. Add the coffee mixture prepared earlier and the cocoa powder into the designated batter and whisk until well combined. 6. In the video, I used a 6-inch round pan with a removable bottom. You can also use a loaf pan, square pan or any suitable pan. Line the pan with parchment paper. 7. Spoon both batters into the pan intermittently. Then use a wooden skewer to swirl and make a marble effect. There is no right or wrong method and the beauty of it is that each marble cake will turn out differently, so they are unique. 8. Bake for 1 hour or until a wooden skewer comes out clean. If you use any bigger pans, then the baking time can be shorter around 40 to 50 minutes. 9. Meanwhile, make the cream cheese frosting. This is optional but it does elevate the cake. 10. Mix the instant coffee powder with the hot water, stir until dissolved then set aside. 11. Mix the softened cream cheese until soft and creamy. Then add the powdered sweetener and mix until smooth. Add the cold whipping/heavy cream and whisk until well combined. Lastly, add the coffee mixture and whisk until combined. Chill until needed. The amount of this cream is sufficient to frost the top and sides of the cake. If you are only frosting the top of the cake, then you can reduce the amount by half. 12. Once the cake has been completely cooled, frost the cake then dust generously with cocoa powder. NOTE This post may contain affiliate links.
